Make a quick and colorful fruit pizza using refrigerated sugar cookie dough and a simple cream cheese frosting. This is an easy fruit dessert perfect for any gathering.
4 cups mixed fresh fruit (such as strawberries, blueberries, kiwi, mandarin oranges)
1 tablespoon lemon juice (optional, for fruit glaze)
Instructions
Preheat your oven to the temperature specified on the sugar cookie dough package, usually 350 degrees F.
Press the refrigerated dough evenly into a 12-inch pizza pan or a large round baking sheet.
Bake the sugar cookie crust according to package directions until lightly golden brown around the edges. This usually takes 12 to 15 minutes. Let the cookie crust cool completely on a wire rack.
While the crust cools, prepare the cream cheese fruit pizza frosting. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add the milk one tablespoon at a time until the frosting reaches a spreadable consistency.
Once the crust is cool, spread the cream cheese frosting evenly over the entire surface of the cookie crust.
Arrange your mixed fresh fruit decoratively over the frosting. You can create patterns or simply scatter the fruit for a colorful look. This is where you make your cookie crust pizza beautiful.
If desired, lightly brush the fruit with a mixture of lemon juice and a tiny bit of water to keep it looking fresh.
Slice and serve your easy fruit dessert immediately, or chill for up to 2 hours before serving.
Notes
For mini fruit pizza versions, press small rounds of dough onto a baking sheet and bake them individually.
Use any combination of colorful fruit you like; kiwi, raspberries, and grapes work well.
If you want a thicker frosting, reduce the amount of milk you add.
