Ingredients
Scale
1 cup packed Medjool dates, pitted
1/2 cup hot water
1/2 cup cocoa powder, unsweetened
1/2 cup almond butter or sunflower seed butter
1/4 cup maple syrup (optional, for extra sweetness)
2 teaspoons vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup gluten-free oat flour or almond flour
1/2 cup vegan chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
Soak the pitted dates in the hot water for 10 minutes to soften them.
Transfer the softened dates and the soaking water to a food processor or high-speed blender. Process until you have a smooth paste.
Add the cocoa powder, nut butter, maple syrup (if using), vanilla extract, baking powder, and salt to the date paste. Blend until the mixture is completely smooth and uniform.
Scrape down the sides and add the oat flour or almond flour. Pulse until just combined. Do not overmix.
Fold in the chocolate chips, if you are using them.
Spread the batter evenly into the prepared baking pan.
Bake for 20 to 25 minutes. The edges should look set, but the center should still be slightly soft for a fudgy texture.
Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.
Notes
For the fudgiest result, chill the brownies for at least 2 hours before slicing.
If you do not have oat flour, blend rolled oats in a clean blender until they reach a fine flour consistency.
You can substitute almond butter with tahini for a different flavor profile.
