Ingredients
Scale
1 box white cake mix
1 1/4 cups tonic water
1/3 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Black food coloring
White frosting
Black sprinkles
Instructions
Preheat your oven to 350°F (175°C). Line a cupcake tin with liners.
In a large bowl, combine the cake mix, tonic water, vegetable oil, eggs, and 1 teaspoon vanilla extract.
Beat with an electric mixer on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes.
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
While the cupcakes cool, prepare the frosting. In a small bowl, whisk together the powdered sugar, milk, and 1/2 teaspoon vanilla extract until smooth.
Divide the frosting into two bowls. Leave one bowl white. Add a small amount of black food coloring to the second bowl and mix until you achieve a gray color.
Once the cupcakes are completely cool, frost them with the white frosting.
Using a piping bag or a knife, create ghost shapes with the white frosting on top of each cupcake.
Drizzle the gray frosting over the white frosting to create a spooky effect.
Add black sprinkles for the eyes and mouth of the ghosts.
For the glow effect, place the cupcakes under a black light before serving.
Notes
Ensure your tonic water is fresh for the best glow effect.
Adjust the amount of black food coloring to achieve your desired shade of gray.
Store cupcakes in an airtight container at room temperature.
