Enjoy a delicious and authentic gluten-free Mexican street corn (elote) experience with this easy-to-follow recipe. Perfect for any gathering, this vibrant dish is packed with flavor and made with simple, gluten-free ingredients.

Ingredients

Scale
  • 4 ears of corn
  • 1/4 cup mayonnaise
  • 1/4 cup Mexican crema or sour cream
  • 1/4 cup finely crumbled cotija cheese
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • Extra chili powder for dusting

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until lightly charred and tender, about 8-10 minutes.
  3. While the corn is grilling, whisk together the mayonnaise, Mexican crema (or sour cream), lime juice, chili powder, and cayenne pepper (if using) in a small bowl.
  4. Once the corn is grilled, carefully spread a generous layer of the mayonnaise mixture over each ear of corn.
  5. Roll the coated corn in the crumbled cotija cheese, pressing gently to adhere.
  6. Dust with extra chili powder and garnish with fresh cilantro.
  7. Serve immediately.

Notes

  • Ensure your cotija cheese is pure cotija, as some brands may contain anti-caking agents that are not gluten-free.
  • For an extra smoky flavor, you can lightly char the corn over an open flame.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) until tender and slightly charred.
