Follow these steps to grill zucchini slices coated in a bright, fresh lemon and herb marinade for a flavorful side dish.

Ingredients

Scale
  • 4 medium zucchini
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the zucchini and trim the ends. Slice the zucchini lengthwise into planks about 1/4 inch thick.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, oregano, salt, and pepper to make the marinade.
  3. Place the zucchini slices in a shallow dish or large zip-top bag. Pour the marinade over the zucchini, ensuring all slices are coated. Let the zucchini marinate for at least 20 minutes, but no longer than 1 hour.
  4. Preheat your grill to medium-high heat (about 400 degrees Fahrenheit). Lightly oil the grill grates.
  5. Remove the zucchini from the marinade, letting any excess drip off. Discard the remaining marinade.
  6. Place the zucchini slices directly on the hot grill grates. Grill for 3 to 4 minutes per side, until tender and marked with grill lines. Avoid overcooking to prevent mushiness.
  7. Remove the grilled zucchini from the grill and arrange on a serving platter. Serve immediately.

Notes

  • If you do not have fresh thyme, you can use 1/2 teaspoon of dried thyme.
  • For a slightly different flavor, substitute basil for parsley in the marinade.
  • You can slice the zucchini into rounds instead of planks if you prefer a different shape.
