Ingredients

Scale
  • 1 prepared pie crust (chilled)
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups sliced heirloom tomatoes
  • 1/2 cup chopped yellow onion
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the chilled pie crust into a 9-inch pie plate. Crimp the edges.
  3. In a small bowl, mix together the grated cheddar cheese, flour, salt, and pepper.
  4. Sprinkle this cheese mixture evenly over the bottom of the pie crust.
  5. Arrange the sliced heirloom tomatoes over the cheese layer.
  6. In another bowl, combine the chopped onion, mayonnaise, basil, parsley, and minced garlic. Season with salt and pepper.
  7. Spread this onion mixture evenly over the tomatoes.
  8. Bake for 40-50 minutes, or until the crust is golden brown and the filling is set.
  9. Let the pie cool for at least 10 minutes before slicing and serving.

Notes

  • For an extra cheesy crust, you can add more cheddar cheese.
  • Feel free to add other herbs like thyme or chives to the onion mixture.
  • Ensure your tomatoes are well-drained to prevent a watery pie.
