Ingredients
Scale
3 large eggs
1 tablespoon milk or water
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon unsalted butter
2 ounces soft herb goat cheese, crumbled
1 tablespoon fresh chives, chopped
1 teaspoon fresh parsley, chopped
Instructions
In a small bowl, whisk the eggs, milk or water, salt, and pepper until just combined. Do not over-whisk.
Heat a non-stick skillet (about 8 inches) over medium-low heat. Add the butter and let it melt until it foams slightly. Swirl to coat the pan bottom.
Pour the egg mixture into the hot skillet. Let the eggs set around the edges, about 1 minute.
Gently push the cooked edges toward the center, tilting the pan so the uncooked egg flows underneath. Repeat this process until most of the top surface is set but still slightly moist.
Sprinkle the crumbled goat cheese, chives, and parsley evenly over the surface of the omelet, leaving a 1-inch border clear on the side farthest from the handle.
Using a thin spatula, gently lift the edge of the omelet closest to you and fold it about one-third of the way over the filling.
Tilt the pan slightly away from you. Use the spatula to roll the omelet away from you until it forms a tight log shape.
Slide the omelet roll onto a plate, seam-side down. Slice into thick pieces if desired before serving.
Notes
Use a good quality non-stick pan for the best rolling results.
Keep the heat low to medium-low; high heat makes the eggs tough and prone to tearing when rolled.
If you do not have herb goat cheese, use plain goat cheese and mix in 1 teaspoon total of your preferred fresh herbs like dill or tarragon.
