- 12 large eggs
- 1/2 cup milk (any type)
- 1 cup cooked, chopped spinach
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked, crumbled turkey bacon or ham
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Preheat your oven to 350°F (175°C). Grease a 12-cup standard muffin tin well.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy.
- Distribute the spinach, cheese, and meat evenly among the 12 muffin cups.
- Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
- Bake for 18 to 20 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
- Let the egg bites cool in the tin for 5 minutes before carefully removing them with a small offset spatula or knife.
- Cool completely before storing in an airtight container in the refrigerator.
Notes
- You can substitute any cooked vegetable or meat for the spinach and bacon.
- For easier removal, line the muffin tin cups with silicone liners.
- These reheat well in the microwave in 30-second intervals.
