Make a rich, sticky, sweet, and savory teriyaki sauce from scratch in just 15 minutes using simple pantry ingredients. This sauce works perfectly as a marinade, glaze, or stir-fry addition.

Ingredients

Scale
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/2 cup water
  • 1/4 cup packed brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch
  • 2 teaspoons cold water (for slurry)

Instructions

  1. Combine the soy sauce, 1/2 cup water, brown sugar, rice vinegar, sesame oil, grated ginger, and minced garlic in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves completely.
  3. In a separate small bowl, whisk together the cornstarch and 2 teaspoons of cold water to create a slurry.
  4. Pour the slurry into the simmering sauce while whisking constantly.
  5. Continue to cook and whisk for 1 to 2 minutes until the sauce thickens and becomes glossy and sticky.
  6. Remove the sauce from the heat. Let it cool slightly before using. It will thicken more as it cools.

Notes

  • For a thicker sauce, increase the cornstarch to 1.5 teaspoons with 3 teaspoons of cold water.
  • This sauce is excellent as a marinade for chicken, beef, or tofu for at least 30 minutes before cooking.
  • Store leftover sauce in an airtight container in the refrigerator for up to two weeks.
  • If you prefer a sweeter sauce, add one extra tablespoon of brown sugar.
