Ingredients
Scale
2 cups cooked, shredded or diced chicken
1 cup red or green seedless grapes, halved
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1/4 cup finely chopped celery
1/4 cup chopped pecans or walnuts (optional)
Salt and black pepper to taste
Instructions
Place the cooked chicken in a medium bowl.
In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, and apple cider vinegar until smooth. This is your honey mustard dressing.
Pour the dressing over the chicken. Mix gently until the chicken is evenly coated.
Fold in the halved grapes and the chopped celery. If using nuts, add them now.
Season the salad with salt and pepper to your preference.
Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
Notes
For a tangier flavor, increase the Dijon mustard by one teaspoon.
If you prefer a sweeter salad, add an extra half teaspoon of honey.
You can substitute plain Greek yogurt for half of the mayonnaise for a lower fat option.
This salad keeps well in an airtight container in the refrigerator for up to four days.
