Ingredients
Scale
2 cups cooked, shredded chicken breast
4 slices cooked bacon, crumbled
1 ripe avocado, diced
1/2 cup celery, finely chopped
1/4 cup red onion, finely minced
1/4 cup mayonnaise (or Greek yogurt for lighter version)
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Place the shredded chicken in a medium mixing bowl.
In a separate small bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth. This is your honey mustard dressing base.
Pour the dressing over the chicken. Mix gently until the chicken is evenly coated.
Fold in the crumbled bacon, diced avocado, chopped celery, and minced red onion. Mix carefully to avoid mashing the avocado completely.
Stir in the fresh parsley.
Taste the salad and adjust salt or pepper if needed.
Serve immediately, or chill for at least 30 minutes for flavors to meld.
Notes
For a sandwich, serve on whole-grain bread or croissants.
To serve over greens, place a scoop over a bed of mixed greens and drizzle with extra honey mustard dressing if desired.
If you prefer a tangier flavor, increase the apple cider vinegar to 1 1/2 teaspoons.
This salad keeps well for up to 4 days when stored in an airtight container in the refrigerator.
