Ingredients
Scale
4 ears of corn, husked
1 cup water
1/2 cup mayonnaise
1/4 cup cotija cheese, crumbled
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Pinch of cayenne pepper (optional)
Instructions
Place the water in your Instant Pot.
Add the corn ears to the pot.
Secure the lid and set the valve to sealing.
Cook on high pressure for 2 minutes.
Allow for a natural pressure release for 5 minutes, then carefully quick release any remaining pressure.
Remove the corn and let it cool slightly.
In a small bowl, mix together mayonnaise, cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and cayenne pepper if using.
Spread the mixture evenly over the corn.
Serve immediately.
Notes
For a spicier corn, add more cayenne pepper or a pinch of chipotle powder to the mayo mixture.
If you don’t have cotija cheese, you can substitute with crumbled feta cheese.
You can grill the corn briefly after coating for a smoky flavor.
