Make a rich, creamy, and satisfying Chicken Alfredo that fits your ketogenic diet using zucchini noodles instead of traditional pasta.

Ingredients

Scale
  • 2 large chicken breasts, sliced horizontally
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 4 tablespoons butter, cut into cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 medium zucchini, spiralized into noodles
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken slices lightly with salt and pepper.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic to the same skillet and cook for 30 seconds until fragrant.
  4. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally.
  5. Reduce the heat to low. Whisk in the 1/2 cup of grated Parmesan cheese until the sauce thickens slightly.
  6. Whisk in the 4 cubed tablespoons of butter, one cube at a time, until fully melted and incorporated into the sauce, making it smooth and rich. Season with salt and pepper to taste.
  7. While the sauce simmers, prepare the zucchini noodles (zoodles). You can lightly sauté them in a separate pan for 1-2 minutes or serve them raw for a crunchier texture. Do not overcook the zoodles or they will release too much water.
  8. Slice the cooked chicken. Add the chicken back into the Alfredo sauce to warm through, or place the chicken over the zoodles.
  9. Serve immediately, topping each portion with extra grated Parmesan cheese and fresh parsley.

Notes

  • For a thicker sauce, simmer the cream mixture slightly longer before adding the cheese.
  • You can substitute shrimp for chicken or add steamed broccoli florets for extra vegetables.
  • Net Carbs are approximately 5g per serving, depending on the size of your zucchini.
