Make this quick, creamy smoothie that tastes like strawberry cheesecake while keeping your carbohydrate count low for your ketogenic diet.

Ingredients

Scale
  • 1 cup frozen strawberries
  • 4 ounces cream cheese, softened
  • 1/2 cup unsweetened almond milk
  • 1/4 cup heavy whipping cream
  • 1 tablespoon MCT oil or coconut oil
  • 1 tablespoon erythritol or monk fruit sweetener (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 4 ice cubes (optional, for extra thickness)

Instructions

  1. Place the softened cream cheese, heavy cream, almond milk, MCT oil, sweetener, and vanilla extract into a high-speed blender.
  2. Add the frozen strawberries and ice cubes, if using.
  3. Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  4. Taste the smoothie and add more sweetener if you prefer it sweeter.
  5. If the smoothie is too thick, add a splash more almond milk and blend briefly. If it is too thin, add 1-2 more ice cubes or a small amount of xanthan gum (optional) and blend again.
  6. Pour into a glass and serve immediately.

Notes

  • For a thicker, more dessert-like texture, use only 1/4 cup of almond milk and ensure your strawberries are fully frozen.
  • You can substitute the strawberries with 1/2 cup of frozen raspberries for a slightly different berry flavor.
  • Use a full-fat cream cheese for the best flavor and fat content.
