Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 (15 ounce) container cottage cheese (small curd recommended)
  • 1 (15 ounce) container ricotta cheese (optional, for extra creaminess)
  • 1 (24 ounce) jar marinara sauce
  • 1 box lasagna noodles (about 9-12 noodles)
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground meat in a large skillet over medium heat until browned. Drain off any excess fat.
  3. In a medium bowl, mix together the cottage cheese, optional ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and pepper until well combined. This is your creamy cheese layer.
  4. Spread about 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.
  5. Arrange a single layer of cooked lasagna noodles over the sauce. If your noodles are not pre-cooked, prepare them according to package directions first.
  6. Spread half of the cottage cheese mixture evenly over the noodles.
  7. Sprinkle one-third of the mozzarella cheese over the cheese layer.
  8. Spoon about 1 cup of marinara sauce over the mozzarella.
  9. Add another layer of noodles.
  10. Spread the remaining half of the cottage cheese mixture over this noodle layer.
  11. Sprinkle another one-third of the mozzarella cheese on top.
  12. Add the final layer of noodles.
  13. Pour the remaining marinara sauce over the top layer of noodles, spreading it to cover completely.
  14. Sprinkle the remaining mozzarella cheese over the sauce.
  15. Bake for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  16. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • For a quicker assembly, use oven-ready lasagna noodles, but you may need to add a little extra sauce to ensure they cook through.
  • If you want a richer flavor, brown the ground meat with 1/2 teaspoon of garlic powder and 1/4 teaspoon of onion powder.
  • This recipe freezes well. Cool completely, wrap tightly, and freeze for up to three months. Thaw overnight in the refrigerator before reheating.
