Ingredients
Scale
12 large eggs
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 pound breakfast sausage, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup chopped onion
1/2 cup chopped bell pepper
12 large flour tortillas
12 pieces of aluminum foil
Instructions
In a large bowl, whisk together eggs, milk, salt, and pepper.
Cook breakfast sausage in a skillet until browned and crumbled. Drain excess grease.
Add chopped onion and bell pepper to the skillet with the sausage and cook until softened, about 5 minutes.
Pour the egg mixture into the skillet with the sausage and vegetables. Cook, stirring occasionally, until the eggs are set.
Stir in the shredded cheddar cheese until melted.
Spoon about 1/2 cup of the egg mixture onto the center of each tortilla.
Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
Wrap each burrito individually in aluminum foil.
Store in the refrigerator until ready to cook.
To heat, place wrapped burritos on a campfire or grill for about 10-15 minutes, turning occasionally, until heated through.
Notes
You can customize the fillings with your favorite breakfast ingredients like bacon, potatoes, or different cheeses.
For easier cleanup at the campsite, you can place the foil-wrapped burritos directly on a piece of parchment paper before wrapping in foil.
Ensure the burritos are thoroughly heated before serving to avoid any food safety concerns.
