Ingredients
Scale
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup olive oil
4 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
4 bone-in pork chops (about 1 inch thick)
Instructions
In a medium bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, Dijon mustard, oregano, salt, pepper, and red pepper flakes. This makes a great citrus garlic pork chop marinade.
Place the pork chops in a large zip-top bag or a shallow dish. Pour the marinade over the chops, ensuring they are fully coated.
Seal the bag or cover the dish. Refrigerate for at least 2 hours, or up to 8 hours for the best flavor. An overnight pork marinade works well if you plan ahead.
Remove the pork chops from the marinade, letting excess drip off. Discard the remaining marinade.
For grilling: Preheat your grill to medium-high heat. Grill the pork chops for 4 to 6 minutes per side, until the internal temperature reaches 145 degrees F.
For baking: Preheat your oven to 400 degrees F. Place the chops on a baking sheet lined with foil. Bake for 18 to 22 minutes, or until the internal temperature reaches 145 degrees F.
Let the pork chops rest for 5 minutes before serving.
Notes
For a low-sodium hack, reduce the added salt to 1/2 teaspoon and rely on the citrus for brightness.
This recipe is a fantastic base; you can swap the citrus for lemon or add a tablespoon of soy sauce for an Asian pork chop marinade flavor profile.
If you prefer a sweeter taste, substitute 1 tablespoon of the citrus juice with honey to create a honey mustard pork chops variation.
