This easy tuna steak marinade recipe uses bright Asian flavors like soy sauce and fresh ginger to perfectly season your ahi tuna before searing or grilling.

Ingredients

Scale
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. In a medium bowl, whisk together the soy sauce, lime juice, sesame oil, grated ginger, minced garlic, brown sugar, black pepper, and red pepper flakes if you are using them. This creates your flavorful tuna steak preparations.
  2. Place your tuna steaks in a shallow dish or a resealable plastic bag.
  3. Pour the marinade over the tuna, making sure both sides of the steak are coated well.
  4. Marinate the tuna for 15 to 30 minutes. Do not marinate longer than 30 minutes, as the acid in the lime juice can start to change the texture of the fish.
  5. Remove the tuna from the marinade and pat the steaks dry with paper towels before cooking. Discard the remaining marinade.
  6. Sear or grill your tuna steaks immediately for the best results.

Notes

  • For a teriyaki marinade for tuna variation, add 1 teaspoon of mirin to the mixture.
  • If you are marinating ahi tuna, 20 minutes is usually the sweet spot for flavor penetration.
  • Patting the tuna dry before cooking helps you achieve a beautiful crust when searing.
  • This savory marinade works wonderfully for grilled tuna steak options.
