Make these easy Mediterranean appetizers, crispy feta snacks, or baked spinach bites using phyllo dough for a golden brown, satisfying crunch. They are simple to prepare and perfect for any gathering.

Ingredients

Scale
  • 10 sheets phyllo dough, thawed
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 10 ounces fresh spinach, washed and dried well
  • 6 ounces feta cheese, crumbled
  • 1/4 cup ricotta cheese
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • Pinch of salt (feta is salty)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet.
  2. If using fresh spinach, quickly sauté it in the olive oil until wilted. Squeeze out as much excess moisture as possible using a clean kitchen towel or paper towels. Chop the spinach finely.
  3. In a medium bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, beaten egg, nutmeg, pepper, and salt. Mix until the filling is evenly combined.
  4. Lay one sheet of phyllo dough flat on a clean, dry surface. Brush the entire surface lightly with the melted butter.
  5. Place a second sheet of phyllo dough directly on top of the first. Brush this sheet lightly with butter as well.
  6. Cut the stacked phyllo sheets into four equal strips lengthwise.
  7. Place about 1 tablespoon of the spinach and feta mixture near the short end of one strip.
  8. Fold the corner of the strip over the filling to form a triangle shape. Continue folding the strip over itself like folding a flag until you reach the end of the strip, creating a small, sealed crisp.
  9. Brush the top of the finished crisp lightly with more melted butter.
  10. Place the crisp seam-side down on the prepared baking sheet. Repeat this process with the remaining filling and phyllo dough sheets. You should have about 20 crisps.
  11. Bake for 12 to 15 minutes, or until the phyllo is golden brown and crisp. Serve warm.

Notes

  • For freezer friendly Mediterranean snacks, assemble the crisps but do not bake. Place them on a baking sheet and freeze until solid. Transfer the frozen crisps to a freezer bag. Bake from frozen, adding 5-7 minutes to the baking time.
  • If you want an air fryer spinach feta crisp, preheat your air fryer to 350 degrees F (175 degrees C) and cook for 8-10 minutes, checking halfway through for desired crispness.
  • This recipe makes a great addition to Mediterranean snack board ideas.
