Ingredients
Scale
1 tablespoon olive oil
1 cup fresh spinach, finely chopped
4 ounces feta cheese, crumbled
1/4 teaspoon dried oregano
1/8 teaspoon black pepper
1 package (16 sheets) phyllo dough, thawed
2 tablespoons unsalted butter, melted
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
In a small bowl, combine the chopped spinach, crumbled feta cheese, oregano, and black pepper. Mix until the ingredients are evenly distributed.
Lay one sheet of phyllo dough flat on a clean surface. Brush the entire surface lightly with melted butter.
Place a second sheet of phyllo dough directly on top of the first sheet. Brush this second sheet lightly with butter.
Place about 1 tablespoon of the spinach and feta mixture in a corner of the layered phyllo sheets.
Fold the corner over the filling diagonally to form a triangle shape. Continue folding the triangle, like folding a flag, until you reach the end of the dough strip.
Place the finished crisp on the prepared baking sheet. Repeat this process with the remaining phyllo sheets and filling until all crisps are formed.
Bake for 10 to 12 minutes, or until the crisps are golden brown and crispy.
Remove from the oven and let cool slightly before serving.
Notes
If you do not have phyllo dough, you can use small round wonton wrappers instead; layer two wrappers, brush with butter, fill, and fold into a turnover shape.
For extra flavor, add a pinch of nutmeg to the filling mixture.
Make sure your phyllo dough is completely thawed before starting to prevent tearing.
