- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled cotija cheese
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Preheat your grill to medium-high heat.
- Brush the corn ears with olive oil and grill for about 10-12 minutes, turning occasionally, until lightly charred.
- While the corn is grilling, whisk together mayonnaise, cilantro, lime juice, chili powder, and cumin in a small bowl.
- Once grilled, let the corn cool slightly.
- Spread the mayonnaise mixture evenly over each ear of corn.
- Sprinkle with cotija cheese, salt, and pepper.
- Serve immediately and enjoy the vibrant flavors!
Notes
- For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
- If you don’t have cotija cheese, feta cheese can be a good substitute.
- Grilling the corn adds a wonderful smoky flavor, but you can also boil or roast it if grilling isn’t an option.
