Make light, puffy, individual-sized Dutch baby pancakes baked in muffin tins and serve them with a simple, fast berry compote topping.

Ingredients

Scale
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon lemon zest (optional)
  • 4 tablespoons unsalted butter, divided
  • 1 cup mixed berries (fresh or frozen)
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar (for compote)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Place 4 tablespoons of butter into the cups of a standard 12-cup muffin tin, distributing it evenly among 6 cups. Place the tin in the oven while it preheats to melt the butter.
  2. While the oven heats, prepare the batter. In a medium bowl, whisk together the eggs, flour, milk, salt, 1 tablespoon sugar, vanilla extract, and lemon zest, if using, until just combined. Do not overmix; a few small lumps are acceptable.
  3. Carefully remove the hot muffin tin from the oven. Swirl the melted butter to coat the bottom and sides of the cups.
  4. Pour the batter evenly into the 6 prepared cups, filling each about two-thirds full.
  5. Bake for 15 to 18 minutes, or until the pancakes are significantly puffed and golden brown. Do not open the oven door during the first 12 minutes of baking.
  6. While the pancakes bake, make the compote. Combine the mixed berries, lemon juice, and 1 tablespoon of sugar in a small saucepan. Bring to a simmer over medium heat. Cook for 5 minutes, stirring occasionally, until the berries soften and the sauce thickens slightly. Remove from heat.
  7. Remove the mini Dutch babies from the oven and serve immediately with the warm berry compote spooned over the top.

Notes

  • For best results, ensure your milk and eggs are at room temperature before mixing the batter.
  • You can substitute blueberries or strawberries for the mixed berries in the compote.
  • If you do not have a muffin tin, you can use individual 4-ounce ramekins, but baking time may vary slightly.
