Bake a batch of these moist bran muffins. They are packed with fiber, perfect for a quick breakfast, a healthy snack, or freezing for later use.

Ingredients

Scale
  • 1 cup wheat bran
  • 1 cup oat bran
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain yogurt or buttermilk
  • 1/2 cup packed brown sugar, natural sweetener, or maple syrup
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup milk (dairy or non-dairy)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the wheat bran, oat bran, whole wheat flour, baking soda, baking powder, salt, and cinnamon. This is your dry mix.
  3. In a separate medium bowl, whisk the egg, applesauce, yogurt, sweetener, oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Slowly pour in the milk. Stir until the batter is uniform. The batter will be thin.
  6. Let the batter rest for 5 minutes. This allows the bran to absorb moisture, which helps create a moist texture.
  7. Divide the batter evenly among the 12 prepared muffin cups. Fill each about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. Store cooled muffins in an airtight container at room temperature for up to 3 days, or freeze them for longer storage.

Notes

  • For extra flavor and moisture, you can add 1/2 cup of raisins or chopped apple to the batter when combining wet and dry ingredients.
  • This recipe makes a fantastic grab and go breakfast option.
  • If you prefer a less sweet muffin, reduce the brown sugar or maple syrup by 2 tablespoons.
