Ingredients
Scale
1 3/4 cups all-purpose flour
1 cup packed light brown sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs
1/2 cup vegetable oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup grated carrots (about 2 medium carrots)
1 cup chopped apple (peeled or unpeeled)
1/2 cup chopped pecans or walnuts
1/2 cup raisins
1/2 cup shredded unsweetened coconut
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Line a standard 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk together the eggs, vegetable oil, applesauce, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix.
Fold in the grated carrots, chopped apple, nuts, raisins, and shredded coconut until evenly distributed throughout the batter.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best moisture, use fresh carrots and apples. Squeeze excess liquid from the grated carrots if they seem very wet.
To freeze these muffins, cool them completely, then wrap each muffin individually in plastic wrap before placing them in a freezer-safe bag or container. They keep well for up to three months.
If you prefer a slightly sweeter muffin, you can substitute the applesauce with an equal amount of packed brown sugar, reducing the overall dry sugar slightly.
