Assemble this fresh, gourmet salad featuring sweet peaches, creamy burrata, and salty prosciutto. It requires no cooking and is perfect for entertaining.

Ingredients

Scale
  • 3 ripe peaches, sliced
  • 8 ounces fresh burrata cheese, torn into pieces
  • 4 ounces thinly sliced prosciutto
  • 5 cups mixed greens (like arugula or spring mix)
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 small shallot, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 2 tablespoons balsamic glaze

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the olive oil, lemon juice, minced shallot, and Dijon mustard. Season with salt and pepper. Set aside.
  2. Arrange the greens on a large platter or individual plates.
  3. Distribute the sliced peaches and torn burrata pieces evenly over the greens.
  4. Drape the slices of prosciutto loosely around the peaches and cheese.
  5. Drizzle the prepared vinaigrette over the entire salad.
  6. Garnish with torn fresh basil leaves.
  7. Finish by drizzling the balsamic glaze over the salad just before serving.

Notes

  • For the best flavor, use peaches that are fragrant and yield slightly to gentle pressure.
  • If you cannot find balsamic glaze, simmer 1/2 cup of balsamic vinegar in a small saucepan until it reduces by half and thickens.
  • Use arugula for a peppery contrast to the sweet fruit.
