- 1 cup frozen pineapple chunks
- 1/2 cup unsweetened coconut milk (canned or carton)
- 1/4 cup water or coconut water
- 1 tablespoon shredded unsweetened coconut
- 1 teaspoon lime juice (optional)
- Place the frozen pineapple chunks, coconut milk, water, shredded coconut, and lime juice (if using) into a blender.
- Secure the lid and blend on high speed until the mixture is completely smooth and creamy.
- If the smoothie is too thick, add a little more water or coconut water, one tablespoon at a time, until you reach your desired consistency.
- Pour the smoothie into a glass and serve immediately.
Notes
- Use frozen pineapple for the thickest, coldest texture without needing ice.
- For a richer flavor, use full-fat canned coconut milk instead of carton coconut milk.
- Add 1/2 scoop of vanilla protein powder for a protein boost.
- For a green addition, blend in a handful of fresh spinach; the flavor will not change much.
