Make this quick, sweet, and savory Thai Pineapple Fried Rice. This recipe is easy to adapt for chicken, shrimp, or vegetarian options and works well for a weeknight dinner.

Ingredients

Scale
  • 3 cups cooked, cold jasmine rice
  • 1 tablespoon vegetable oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced fresh pineapple
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas and corn mix
  • 2 large eggs, lightly beaten
  • 1/2 cup cooked protein (shrimp, diced chicken, or tofu cubes)
  • 2 tablespoons fish sauce (use soy sauce or tamari for vegetarian/vegan)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/4 cup unsalted cashews, toasted
  • 2 tablespoons chopped fresh cilantro
  • Optional: 1/2 cup fresh pineapple shell for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the onion and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds until fragrant.
  3. Push the onion and garlic to one side of the wok. Pour the beaten eggs onto the empty side and scramble until just set. Break the eggs into small pieces and mix with the onion mixture.
  4. Add the carrots and cook for 2 minutes. Add the cooked protein (if using) and the frozen peas and corn. Stir well.
  5. Add the cold rice to the wok. Break up any clumps with your spatula. Stir fry for 3 to 4 minutes until the rice is heated through.
  6. Add the diced fresh pineapple, fish sauce (or substitute), soy sauce, sugar, and white pepper. Stir constantly for 2 minutes to combine the flavors.
  7. Remove the wok from the heat. Stir in half of the toasted cashews and half of the cilantro.
  8. Serve immediately. Top with the remaining cashews and cilantro. For presentation, serve the rice inside a hollowed-out pineapple half.

Notes

  • Use day-old, cold rice for the best texture in fried rice.
  • For a vegetarian or vegan version, substitute the fish sauce with an equal amount of soy sauce or tamari, and use tofu or omit the protein.
  • If you want a tangier flavor, add 1 teaspoon of lime juice at the end.
