Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Sesame seeds, for garnish (optional)
  • Cooked rice or noodles, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cut chicken pieces with olive oil, salt, and pepper. Spread the seasoned chicken in a single layer on one half of the prepared baking sheet.
  3. Place the broccoli florets on the other half of the baking sheet.
  4. In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, and minced garlic to create the sauce base.
  5. Pour half of the honey garlic sauce over the chicken pieces, tossing gently to coat. Leave the broccoli plain for now.
  6. Place the baking sheet in the preheated oven and roast for 12 minutes.
  7. While the chicken and broccoli roast, return the remaining half of the sauce to the small bowl. Whisk in the cornstarch slurry until smooth.
  8. After 12 minutes, remove the pan from the oven. Pour the remaining sauce mixture over the broccoli florets and toss them directly on the pan until coated.
  9. Return the pan to the oven and roast for another 8 to 10 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the broccoli is tender-crisp.
  10. Remove from the oven. If the sauce seems thin, you can quickly brush any excess sauce from the pan over the chicken and broccoli.
  11. Serve immediately over cooked rice or noodles, garnished with sesame seeds if you wish.

Notes

  • You can substitute chicken thighs for chicken breasts if you prefer darker meat.
  • For a low carb chicken broccoli dinner, skip the rice or noodles and serve with cauliflower rice instead.
  • If you want a thicker glaze, use a full tablespoon of cornstarch in the slurry.
