Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon red food coloring
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the melted butter and granulated sugar until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring until the batter is uniformly red.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In another bowl, beat the softened cream cheese with 1/4 cup powdered sugar and 1 teaspoon vanilla extract until smooth.
  7. In a third bowl, cream together the softened butter and 1 cup powdered sugar until light and fluffy. Beat in the vanilla extract and milk until smooth.
  8. Gradually add the flour, granulated sugar, cocoa powder, baking soda, and salt to the butter mixture, mixing until just combined. Stir in the chocolate chips.
  9. Drop spoonfuls of the red velvet batter and the chocolate cookie batter randomly over the prepared baking pan. Use a knife or toothpick to swirl the batters together, creating a marbled effect.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  11. Let the brookies cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.

Notes

  • For a fudgier brownie layer, you can add a tablespoon or two of melted chocolate to the red velvet batter.
  • Ensure your cream cheese and butter are at room temperature for the cream cheese and cookie batters to achieve the best texture.
  • You can customize the brookies by adding your favorite mix-ins like white chocolate chips, chopped nuts, or sprinkles.
