- 1 pound radishes, trimmed and halved or quartered
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh dill, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the trimmed radishes on a baking sheet.
- Drizzle the radishes with olive oil and toss to coat evenly.
- Spread the radishes in a single layer on the baking sheet.
- Roast for 15 minutes.
- Remove the pan from the oven. Add the minced garlic, salt, and pepper to the radishes and toss gently.
- Return the pan to the oven and roast for another 10 to 15 minutes, or until the radishes are tender when pierced with a fork.
- Remove from the oven and immediately toss with the fresh dill before serving.
Notes
- If you do not have fresh dill, you can substitute 1/2 teaspoon of dried dill, adding it with the garlic before the second roasting period.
- For a tangier flavor, squeeze fresh lemon juice over the radishes after roasting.
- These roasted radishes pair well with roasted chicken or grilled fish.
