A rustic and elegant dessert featuring ripe plums baked in a buttery crust, drizzled with a sweet honey-thyme glaze.

Ingredients

Scale
  • 1 sheet refrigerated pie crust
  • 3 cups sliced ripe plums (about 4-5 medium)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)
  • For the Glaze:
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Gently unroll the pie crust onto the prepared baking sheet.
  3. In a medium bowl, toss the sliced plums with granulated sugar, cornstarch, lemon juice, and cinnamon.
  4. Arrange the plum mixture in the center of the pie crust, leaving a 2-inch border.
  5. Fold the border of the pie crust up and over the edges of the plums, pleating as needed to create a rustic edge.
  6. Brush the folded crust with the beaten egg wash and sprinkle with turbinado sugar.
  7. Bake for 25-30 minutes, or until the crust is golden brown and the plums are bubbly.
  8. While the galette is baking, prepare the glaze by gently warming the honey and stirring in the fresh thyme leaves.
  9. Once the galette is out of the oven, let it cool slightly, then drizzle the honey-thyme glaze over the plums.

Notes

  • Ensure your plums are ripe but still firm for the best texture.
  • You can use any type of plum you like, but a mix of varieties can add depth of flavor.
  • If you don’t have turbinado sugar, regular granulated sugar works as well for sprinkling on the crust.
  • This galette is best served warm, but leftovers can be stored at room temperature for a day or refrigerated for up to two days.
