Make these simple Italian sausage stuffed mushrooms with cream cheese and Parmesan. They are perfect party finger foods that bake up beautifully without getting soggy.

Ingredients

Scale
  • 1 pound cremini mushrooms, stems removed and finely chopped
  • 1 pound bulk Italian sausage, casings removed
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup panko breadcrumbs (optional, for a firmer filling)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a baking sheet.
  2. In a large skillet over medium heat, cook the Italian sausage, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
  3. In a medium bowl, combine the cooked sausage, softened cream cheese, Parmesan cheese, parsley, minced garlic, salt, and pepper. Mix well until everything is evenly combined. If you want a less moist filling, stir in the panko breadcrumbs now.
  4. Wipe the mushroom caps clean with a damp cloth. If the caps are very large, you can gently scrape out a little more of the inside to make more room for the stuffing.
  5. Spoon the sausage mixture evenly into each mushroom cap, mounding it slightly on top.
  6. Place the stuffed mushrooms on the prepared baking sheet.
  7. Bake for 20 to 25 minutes, or until the mushrooms are tender and the filling is hot and lightly golden brown. For smaller mushrooms, check at 18 minutes.
  8. Serve immediately as a great holiday appetizer platter addition.

Notes

  • To make this low-carb, skip the panko breadcrumbs entirely. The cream cheese helps hold the filling together.
  • You can prepare these Italian sausage stuffed mushrooms cream cheese mixture up to 24 hours ahead. Cover and refrigerate the assembled mushrooms before baking. Add 5 minutes to the bake time if baking directly from the refrigerator.
  • If you prefer to air fry stuffed mushrooms, cook them at 350 degrees F for about 10 to 12 minutes, checking for doneness.
  • These make excellent Thanksgiving appetizers or easy potluck appetizers.
