Ingredients
Scale
4 (6 ounce) salmon fillets, skin on or off
1 tablespoon olive oil
Salt and black pepper to taste
1 cup fresh or frozen strawberries, hulled
2 tablespoons rice vinegar
2 tablespoons soy sauce or tamari
1 tablespoon honey or maple syrup
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon toasted sesame oil
1 tablespoon sesame seeds, toasted, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Rub the salmon fillets with olive oil and season lightly with salt and pepper. Place them on the prepared baking sheet.
Prepare the glaze: Combine strawberries, rice vinegar, soy sauce, honey, ginger, and garlic in a small saucepan.
Bring the mixture to a simmer over medium heat. Cook for 8 to 10 minutes, stirring occasionally, until the strawberries break down and the sauce thickens slightly.
Remove the sauce from the heat. Use an immersion blender or carefully transfer the sauce to a regular blender to puree until smooth. Return the puree to the saucepan.
Stir in the toasted sesame oil. Taste the glaze and adjust sweetness or acidity if needed to balance the flavors.
Brush about half of the glaze evenly over the top of the salmon fillets.
Bake the salmon for 12 to 15 minutes, depending on the thickness, until cooked through.
Remove the salmon from the oven. Brush the remaining glaze over the hot fish. The heat will help the glaze set and become sticky.
Garnish immediately with toasted sesame seeds before serving.
Notes
For a thicker, shinier glaze, simmer the sauce longer until it coats the back of a spoon. Do not over-reduce, or it may burn during the final minutes of baking.
If you prefer pan-searing, sear the salmon skin-side down first, then flip and brush with glaze during the last 3 minutes of cooking.
Serve this salmon with steamed rice and lightly sautéed green beans or asparagus to complement the sweet and savory profile.
