Prepare a flavorful, traditional shrimp boil with minimal cleanup using these easy-to-assemble grilled foil packets filled with shrimp, sausage, corn, and potatoes.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage (like Andouille or Kielbasa), sliced into 1-inch pieces
  • 1 pound small red potatoes, quartered
  • 4 ears of corn, cut into 2-inch pieces
  • 1 medium onion, roughly chopped
  • 4 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter
  • 2 tablespoons Cajun seasoning (or to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon smoked paprika
  • Heavy-duty aluminum foil

Instructions

  1. Prepare your potatoes by boiling them separately for about 8 minutes until slightly tender. Drain them well.
  2. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  3. Remove the butter mixture from the heat. Stir in the Cajun seasoning, lemon juice, Old Bay seasoning, and smoked paprika. This is your sauce.
  4. Tear off four large sheets of heavy-duty aluminum foil (about 18 inches long).
  5. Divide the potatoes, sausage, corn pieces, and onion evenly among the four foil sheets, placing them in the center of each sheet.
  6. Add the peeled shrimp to each pile.
  7. Drizzle the Cajun butter sauce evenly over the ingredients in each packet.
  8. Fold the foil over the ingredients. Bring the long edges together over the center and fold them down tightly to create a seam. Fold the ends up tightly to seal the packet completely, leaving a little room for steam inside.
  9. Preheat your grill to medium heat (about 375°F).
  10. Place the sealed foil packets directly on the grill grates. Cook for 12 to 15 minutes, flipping the packets halfway through the cooking time.
  11. Carefully open one packet to check for doneness; the shrimp should be pink and opaque, and the potatoes should be tender.
  12. Serve the packets immediately, opening them carefully at the table to release the steam.

Notes

  • For oven baking, place the sealed packets on a baking sheet and bake at 400°F for 15 to 20 minutes.
  • You can substitute chicken or smoked sausage for the traditional sausage.
  • If you prefer more heat, increase the amount of Cajun seasoning or add a pinch of cayenne pepper to the butter sauce.
