Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound small red potatoes, quartered
  • 1 pound smoked sausage (like andouille or kielbasa), sliced
  • 2 ears of corn, shucked and cut into 2-inch pieces
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. In a large bowl, combine the melted butter, Cajun seasoning, garlic powder, paprika, and cayenne pepper (if using). Mix well.
  3. Add the shrimp, potatoes, sausage, and corn to the bowl with the butter mixture. Toss everything gently to ensure it’s evenly coated.
  4. Tear off four large sheets of heavy-duty aluminum foil.
  5. Divide the shrimp mixture evenly among the four foil sheets, placing it in the center of each.
  6. Fold the foil packets securely, ensuring no steam can escape.
  7. Place the foil packets directly on the grill grates or on a baking sheet in the oven.
  8. Grill for 12-15 minutes, or bake for 18-20 minutes, until the shrimp are pink and cooked through, and the potatoes are tender.
  9. Carefully open the foil packets (watch out for steam!).
  10. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

  • For extra flavor, you can add other vegetables like bell peppers or onions to the packets.
  • Adjust the amount of cayenne pepper to control the spice level.
  • Ensure potatoes are cut small enough to cook through in the given time.
