Ingredients
Scale
3 lb pork shoulder (pork butt), trimmed of excess fat
1 cup low-sodium soy sauce
1/2 cup honey
1/4 cup apple cider vinegar
1/4 cup packed brown sugar
6 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 cup water
1 tablespoon cornstarch
Instructions
Place the pork shoulder in the bottom of your slow cooker.
In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, brown sugar, minced garlic, ginger, and black pepper.
Pour the sauce mixture evenly over the pork shoulder.
Cover the slow cooker and cook on LOW for 7 to 9 hours or on HIGH for 4 to 5 hours, until the pork is very tender.
Carefully remove the pork from the slow cooker and place it on a large cutting board or in a bowl. Shred the pork using two forks. Discard any large pieces of fat.
While the pork rests, prepare the glaze. Skim any excess fat from the liquid remaining in the slow cooker.
In a small bowl, whisk the water and cornstarch together until smooth.
Pour the cornstarch slurry into the slow cooker liquid. Stir well.
Set the slow cooker to HIGH (if it was on LOW) and cook, uncovered, for 10 to 15 minutes, stirring occasionally, until the sauce thickens into a glaze.
Return the shredded pork to the slow cooker and toss thoroughly to coat the meat with the honey garlic glaze.
Serve immediately or keep warm on the WARM setting.
Notes
For the best texture, cook the pork until it easily pulls apart with gentle pressure. Do not overcook to the point where it becomes dry.
If you prefer a thicker sauce, increase the cornstarch slightly, adding only 1 teaspoon at a time until the desired consistency is reached.
You can substitute maple syrup for honey if desired, but adjust the cooking time slightly as maple syrup can caramelize faster.
