Ingredients
Scale
2 large heads broccoli, cut into medium florets
3 tablespoons olive oil
2 tablespoons unsalted butter, melted
3 cloves garlic, minced
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Place the broccoli florets on the prepared baking sheet. Using the bottom of a sturdy glass or a potato masher, gently smash each floret until it is flattened but still holds together. Do not over-smash them into mush.
In a small bowl, whisk together the olive oil, melted butter, minced garlic, garlic powder, salt, and pepper.
Drizzle the butter mixture evenly over the smashed broccoli. Toss gently with your hands to coat all pieces.
Spread the broccoli in a single layer on the baking sheet, ensuring the cut sides are facing down for maximum crisping.
Roast for 15 minutes.
Remove the pan from the oven. Sprinkle the grated Parmesan cheese evenly over the broccoli.
Return the pan to the oven and roast for another 5 to 8 minutes, or until the edges are crispy and the cheese is melted and lightly browned.
Serve immediately as a side dish or snack.
Notes
For extra crispiness, you can briefly place the pan under the broiler for the last minute, watching carefully to prevent burning.
If you prefer a stronger garlic flavor, increase the fresh minced garlic to 4 cloves.
You can substitute nutritional yeast for Parmesan cheese if you need a dairy-free option.
