Ingredients
Scale
1 tablespoon vegetable oil
1 pound ground chicken
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup creamy peanut butter
3 tablespoons soy sauce or tamari (for gluten free)
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 tablespoon sriracha (adjust for heat)
1 teaspoon sesame oil
1/4 cup water or chicken broth
1/4 cup chopped green onions, plus more for garnish
1 head butter lettuce or romaine hearts, leaves separated and washed
2 tablespoons chopped roasted peanuts, for garnish
1/4 cup fresh cilantro, chopped, for garnish
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5 to 7 minutes. Drain off any excess fat.
Add the minced garlic and grated ginger to the skillet with the chicken. Cook for 1 minute until fragrant.
While the chicken cooks, prepare the sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, and water or broth until smooth.
Pour the peanut sauce over the cooked chicken mixture in the skillet. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
Remove the skillet from the heat. Stir in the 1/4 cup of chopped green onions. Taste the filling and add more sriracha if you want more heat, or a splash of vinegar for more tang.
Arrange the washed lettuce cups on a serving platter. Spoon the spicy peanut chicken filling into each lettuce cup.
Garnish each cup with chopped peanuts, fresh cilantro, and extra green onions before serving immediately.
Notes
For a milder filling, start with 1/2 tablespoon of sriracha. For a hotter filling, increase sriracha to 2 teaspoons or add a pinch of red pepper flakes with the garlic.
You can substitute ground turkey or crumbled firm tofu for the chicken. Adjust cooking time as needed.
To make this gluten free, ensure you use tamari instead of soy sauce.
Prepare the chicken filling up to one day ahead and store it in the refrigerator. Reheat gently before serving.
