Ingredients
Scale
12 medium cremini mushrooms
1 tablespoon olive oil
1 small shallot, minced
2 cloves garlic, minced
5 ounces fresh spinach, chopped
4 ounces feta cheese, crumbled
1/4 cup breadcrumbs (panko preferred)
1 large egg, lightly beaten
1/4 teaspoon black pepper
Pinch of salt
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking sheet.
Clean the mushrooms by wiping them with a damp cloth. Gently remove the stems from the mushroom caps. Finely chop the removed stems and set them aside.
Heat the olive oil in a skillet over medium heat. Add the minced shallot and chopped mushroom stems. Cook until softened, about 3 minutes.
Add the minced garlic and chopped spinach to the skillet. Cook until the spinach wilts completely and any excess moisture evaporates, about 3 to 5 minutes. Remove the skillet from the heat and let the mixture cool slightly.
In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, breadcrumbs, beaten egg, black pepper, and a pinch of salt. Mix until everything is evenly combined.
Arrange the mushroom caps cavity-side up on the prepared baking sheet.
Spoon the spinach and feta filling evenly into each mushroom cap, mounding it slightly.
Bake for 18 to 20 minutes, or until the mushrooms are tender and the filling is lightly golden brown on top.
Serve warm.
Notes
You can prepare the filling up to one day ahead and store it covered in the refrigerator.
If using larger portobello mushrooms, increase the baking time by 5 to 7 minutes.
For a richer flavor, you can add 1 tablespoon of grated Parmesan cheese to the filling mixture.
