Ingredients

Scale
  • 1 cup rice vermicelli noodles
  • 8 ounces chicken breast, shrimp, or firm tofu, cooked and sliced
  • 1 cup shredded carrots
  • 1 cup thinly sliced red cabbage
  • 1 cup cucumber, julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1/2 cup chopped peanuts, for garnish
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water (for thinning sauce)

Instructions

  1. Cook the rice vermicelli noodles according to package directions. Drain and rinse with cold water to stop cooking; set aside.
  2. Prepare your protein: slice cooked chicken, shrimp, or tofu into bite-sized pieces.
  3. Prepare the peanut dressing: In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, lime juice, garlic, and ginger. Slowly whisk in the hot water until the sauce reaches a smooth, pourable consistency.
  4. Assemble the bowls: Divide the cooked noodles among four serving bowls.
  5. Arrange the fresh ingredients neatly over the noodles: layer the carrots, red cabbage, cucumber, mint, and cilantro.
  6. Place your chosen protein on top of the vegetables.
  7. Drizzle a generous amount of the sesame peanut dressing over the entire bowl.
  8. Garnish with chopped peanuts before serving.

Notes

  • For a quick weeknight meal, use pre-shredded carrots and pre-cooked rotisserie chicken.
  • To make this recipe gluten-free, use tamari instead of soy sauce in the dressing.
  • For meal prepping, store the noodles, vegetables, protein, and dressing in separate containers. Combine and dress just before eating.
  • If you prefer a sweeter sauce, add 1 teaspoon of honey or maple syrup to the dressing mixture.
