Prepare simple, pan-seared chicken cutlets topped with a sweet and tangy strawberry goat cheese sauce. This recipe balances savory chicken with fruit and cheese flavors.

Ingredients

Scale
  • 4 thin chicken cutlets (about 4 oz each)
  • 1 tablespoon olive oil
  • 1/2 cup fresh or frozen strawberries, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 cup chicken broth
  • 2 ounces soft goat cheese, crumbled
  • Salt and black pepper to taste
  • 1 tablespoon all-purpose flour (for dredging)

Instructions

  1. Lightly pound the chicken cutlets to an even 1/4-inch thickness. Season both sides with salt and pepper. Lightly dredge the cutlets in flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken cutlets for 3 to 4 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Reduce the heat to medium. Add the chopped strawberries and balsamic vinegar to the same skillet. Cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
  4. Stir in the honey and chicken broth. Bring the mixture to a simmer and cook for 3 minutes until the sauce slightly thickens.
  5. Remove the skillet from the heat. Stir in the crumbled goat cheese until it melts slightly into the sauce, creating a creamy texture. Do not boil after adding the cheese.
  6. Return the chicken cutlets to the skillet. Spoon the strawberry goat cheese sauce over the cutlets.
  7. Serve immediately.

Notes

  • For a smoother sauce, you can briefly blend half of the cooked strawberry mixture before adding the goat cheese.
  • Serve these cutlets over a bed of fresh spinach or alongside roasted asparagus.
  • If you prefer a thicker glaze, add 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water to the simmering sauce.
