A simple recipe for a moist vanilla sheet cake topped with fresh strawberries and light vanilla frosting, perfect for serving a crowd.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup fresh strawberries, hulled and sliced (for batter)
  • 1/2 cup fresh strawberries, sliced (for topping)
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons milk or heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 13×9 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, and 1 teaspoon vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed until just combined.
  4. Gradually add the milk, mixing on low speed until the batter is smooth. Do not overmix.
  5. Gently fold in the 1 cup of sliced strawberries meant for the batter.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan on a wire rack.
  9. To make the frosting, beat the 1 cup of softened butter until creamy. Gradually add the powdered sugar, beating until smooth. Add 1 teaspoon vanilla and 2 tablespoons milk or cream, beating until light and fluffy. Add more milk if needed to reach a spreadable consistency.
  10. Spread the frosting evenly over the cooled cake.
  11. Arrange the remaining 1/2 cup of sliced fresh strawberries over the frosting before serving.

Notes

  • For a moister cake, you can substitute buttermilk for regular milk.
  • To prevent the fresh berries from sinking during baking, lightly dust the sliced strawberries with a teaspoon of flour before folding them into the batter.
  • You can make this cake one day ahead; store it covered at room temperature, adding the fresh berry topping just before serving.
