Make this simple, no-bake frozen treat using Greek yogurt, fresh strawberries, and crunchy pistachios.

Ingredients

Scale
  • 2 cups plain Greek yogurt, full fat or 2%
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced thinly
  • 1/3 cup shelled pistachios, roughly chopped

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet, aiming for about 1/4 to 1/2 inch thickness.
  4. Arrange the sliced strawberries over the yogurt layer.
  5. Sprinkle the chopped pistachios evenly over the top.
  6. Place the baking sheet in the freezer for at least 4 hours, or until completely solid.
  7. Once frozen, remove the bark from the sheet by lifting the parchment paper. Break or cut the bark into irregular pieces.
  8. Store the pieces in an airtight container in the freezer.

Notes

  • Use frozen strawberries if fresh are unavailable, but thaw them slightly and pat them dry before adding to the yogurt.
  • For a tangier flavor, use plain yogurt without added sugar.
  • You can substitute pistachios with almonds or pecans.
