Ingredients
Scale
3 cups cooked short-grain sushi rice
1/4 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
8 ounces imitation crab meat (kani), shredded
4 ounces cream cheese, softened
1/2 cup mayonnaise
2 tablespoons Sriracha (adjust to taste)
1/4 cup chopped green onions
1 tablespoon sesame oil
1/4 cup toasted sesame seeds
2 tablespoons furikake seasoning
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Press the seasoned rice evenly into the bottom of the prepared baking dish.
In a separate bowl, combine the shredded imitation crab, softened cream cheese, mayonnaise, Sriracha, green onions, and sesame oil. Mix until everything is fully incorporated and creamy.
Spread the crab mixture evenly over the layer of rice in the baking dish.
Bake for 15 to 20 minutes, or until the topping is hot and lightly golden brown around the edges.
Remove from the oven. Sprinkle the top generously with toasted sesame seeds and furikake seasoning before serving.
Serve warm directly from the dish with a spoon or spatula.
Notes
You can substitute half of the imitation crab with cooked, flaked salmon for a different flavor profile.
For an extra creamy texture, use full-fat cream cheese.
Serve with soy sauce, pickled ginger, or extra Sriracha on the side for dipping.
