Make this quick recipe for Thai peanut noodles featuring a rich peanut sauce and a mix of crisp, fresh vegetables for great texture.

Ingredients

Scale
  • 12 oz noodles (spaghetti, linguine, or rice noodles)
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce or tamari
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 teaspoon sriracha or chili garlic sauce (adjust to taste)
  • 1/4 cup hot water (or more, to thin)
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded red cabbage
  • 1 cup bean sprouts
  • 1/2 cup chopped scallions, for garnish
  • 2 tablespoons chopped peanuts, for garnish

Instructions

  1. Cook the noodles according to package directions. Drain them and rinse briefly with cold water to stop cooking and remove excess starch. Set aside.
  2. While the noodles cook, prepare the peanut sauce. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and sriracha.
  3. Slowly whisk in the hot water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency. You may need slightly more or less water depending on your peanut butter.
  4. In a large bowl, combine the cooked noodles, julienned carrot, sliced red bell pepper, shredded cabbage, and bean sprouts.
  5. Pour the peanut sauce over the noodle and vegetable mixture. Toss everything together until the noodles and vegetables are evenly coated.
  6. Divide the noodles into serving bowls. Garnish each serving with chopped scallions and chopped peanuts. Serve immediately or chill for later.

Notes

  • For extra crispness in the carrots and peppers, soak the cut vegetables in ice water for 10 minutes before adding them to the bowl. Drain well before tossing.
  • If you prefer a thinner sauce, add a splash more hot water or a teaspoon of lime juice.
  • This dish works well cold, making it a good option for meal prep.
