Make simple, thick pancakes using only oats, bananas, and plant milk. This recipe is completely vegan and requires minimal ingredients.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats (or oat flour)
  • 1/2 cup unsweetened plant milk (soy or almond)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Oil for cooking

Instructions

  1. If using rolled oats, blend them in a food processor or blender until you create a coarse flour consistency.
  2. In a medium bowl, combine the mashed bananas, plant milk, and vanilla extract. Mix well.
  3. Add the oat flour, baking powder, and salt to the wet ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
  4. Let the batter rest for 5 minutes to allow the oats to absorb the liquid. The batter will thicken.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil.
  6. Pour 1/4 cup of batter onto the hot surface for each pancake.
  7. Cook for 3 to 4 minutes per side, until golden brown and bubbles appear on the surface.
  8. Flip carefully and cook the second side until done.
  9. Serve immediately with your favorite toppings.

Notes

  • For gluten-free pancakes, ensure your rolled oats are certified gluten-free.
  • If the batter seems too thick, add plant milk one tablespoon at a time until you reach a thick, pourable consistency.
  • Ripe bananas provide all the sweetness needed, so no added sugar is necessary.
