Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup vegan mayonnaise
  • 1/4 cup nutritional yeast
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled coconut feta
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Lime wedges for serving

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Brush the corn with olive oil and grill or roast until tender and lightly charred, about 8-10 minutes, turning occasionally.
  3. In a small bowl, whisk together the vegan mayonnaise, nutritional yeast, and lime juice until smooth.
  4. In another small bowl, combine the chili powder, smoked paprika, and cayenne pepper.
  5. Once the corn is cooked, brush it generously with the vegan mayonnaise mixture.
  6. Sprinkle the chili spice blend over the corn.
  7. Top with chopped cilantro and crumbled coconut feta.
  8. Serve immediately with lime wedges on the side.

Notes

  • For a spicier kick, add more cayenne pepper or a pinch of chipotle powder.
  • If you don’t have coconut feta, you can omit it or use a different vegan cheese alternative.
  • This dish is best enjoyed fresh off the grill.
