Ingredients
Scale
4 ears of corn, husked
1/2 cup mayonnaise
1/4 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon chili powder
Optional toppings: Tajin, extra cilantro, lime wedges
Instructions
Preheat your grill to medium-high heat.
Grill the corn for 8-10 minutes, turning occasionally, until lightly charred.
In a small bowl, mix together the mayonnaise, cotija cheese, cilantro, lime juice, and chili powder.
Once the corn is cool enough to handle, spread the mayonnaise mixture evenly over each ear of corn.
Sprinkle with additional cotija cheese and cilantro, if desired. Serve immediately with lime wedges.
Notes
For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for 15-20 minutes, turning halfway through.
Cotija cheese can be substituted with feta cheese if unavailable.
