Ingredients
Scale
2 cups grated zucchini, squeezed dry
1 cup corn kernels (fresh or frozen)
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1/4 cup chopped fresh cilantro
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil, for cooking
For the Cilantro Yogurt Dip:
1 cup plain yogurt
1/4 cup chopped fresh cilantro
1 tablespoon lemon juice
1 clove garlic, minced
Salt and pepper to taste
Instructions
In a large bowl, combine the grated zucchini, corn kernels, flour, eggs, chopped cilantro, red onion, minced garlic, baking powder, salt, and pepper. Mix until well combined.
Heat olive oil in a large non-stick skillet over medium heat.
Drop spoonfuls of the batter into the hot skillet, flattening them slightly with the back of the spoon to form patties. Do not overcrowd the skillet.
Cook for 3-4 minutes per side, until golden brown and cooked through.
Remove fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
While the fritters are cooking, prepare the cilantro yogurt dip. In a small bowl, combine yogurt, chopped cilantro, lemon juice, and minced garlic. Season with salt and pepper to taste. Stir well.
Serve the zucchini corn fritters warm with the cilantro yogurt dip.
Notes
Ensure you squeeze out as much moisture as possible from the grated zucchini to prevent soggy fritters.
You can add a pinch of cayenne pepper to the fritter batter for a little heat.
Feel free to add other herbs like mint or parsley to the yogurt dip.
