Ingredients
Scale
2 cups fresh or frozen blueberries
1 cup water
3/4 cup granulated sugar (adjust to taste)
1 tablespoon lemon juice
1 teaspoon vanilla extract (optional)
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry, optional for thickening)
Instructions
Combine blueberries, water, and sugar in a medium saucepan.
Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar dissolves.
Reduce heat to low and simmer for 10 to 15 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.
If you prefer a smoother syrup, mash the berries gently with a spoon or potato masher during simmering.
Remove the saucepan from the heat. Stir in the lemon juice and vanilla extract, if using.
For a thicker syrup, return the mixture to low heat. Slowly whisk in the cornstarch slurry. Simmer for 1 minute until the syrup thickens to your desired consistency.
Strain the syrup through a fine-mesh sieve into a clean jar if you want a very smooth syrup, pressing down on the solids to extract all the liquid. Discard solids or reserve for another use.
Let the syrup cool completely before storing. It will thicken more as it cools.
Notes
For a brighter color, use fresh blueberries. Frozen blueberries work well but may result in a slightly deeper, less vibrant color.
Adjust the sugar amount based on the sweetness of your berries. Start with less and add more if needed before removing from the heat.
To achieve a thick syrup without cornstarch, simmer the mixture longer until it reduces significantly.
Store the finished syrup in an airtight container in the refrigerator for up to two weeks.
Use this syrup on pancakes, waffles, yogurt, ice cream, or mix it into sparkling water for a homemade soda.
